2005 Vintage Chateau Rollat

  2005 was a beautiful vintage for the Seven Hills and Pepperbridge Vineyards. The yield on our blocs was managed to 2 to 2.5 tons per acre resulting in small, concentrated grapes. All fermentations were completed within the expected times and wines of exceptional balance and intensity resulted. The press was very gentle, sacrificing volume for quality.

1/3 New French Oak (Terransaud, Vicard, Seguin Moreau), 1/3 One-Wine French Oak, 1/3 Two-Wine French Oak

Notes: The 2005 Rollat was designed to showcase the fabulous fruit of Walla Walla while presenting a wine of classic elegance and balance. We believe we have achieved our goal in this wine. The wine features lovely cherry in the Merlot, raspberry in the Cabernet Franc and dark fruit flavors in the Cabernet Sauvignon. The mouth-feel features tannins that are round and at the mid palette along with perfect acidity

Notes: The 2005 Edouard de Rollat is the premier wine of Chateau Rollat. It is perfectly balanced with big, round tannins, complex and sophisticated layers of flavor, and perfect acidity. The wine features deep currant and cassis along with other tones of dark fruit. It is earthy and rich yet displays the same silky mouth feel as Rollat. The tannin structure and acidity make this wine a long lived Cabernet that is drinkable now but will improve with age. The wine should be able to be kept for many years.
